Prize Pork Presents for Your BBQ season

With his naturally inquisitive mind, Brian Misko has taken his passion about grilling from his backyard playground in Surrey, British Columbia to competing and winning awards around North America.

Starting with bbq competitions in 2006 in Vancouver and Whistler, Brian has lead his team to the Jack Daniels World BBQ Championships in 2009 and again this past October. House of Q completed this 2014 bbq season as the #1 Team in Canada. Brian was a guest chef at the Vancouver 2010 Winter Olympics with Vikram Vij, Pino Postero, John Bishop and Tojo at his side. His collection of trophies, plaques, ribbons and awards shows his determination to be the best.

Brian shares his know-how through regular interviews and cooking demonstrations on TV, newspapers and magazine articles. Thousands have seen his BBQ Tips on the Global TV BC Morning News, at a trade show cooking demonstration or at cooking classes across Western Canada.

Most exciting is his new title as cookbook author. Having just completed the editing Brian is looking forward to sharing his book, Grilling with House of Q,  released in spring of 2015.

Introducing Johnston’s own red seal certified… Chef Alex Pugsley!

Inspiration is everywhere; just ask Johnston’s Red Seal Chef Alex Pugsley whose BC Pork creations illustrate the freshness of the local treasures that surround us daily.

From early years in High school, Alex knew he wanted a field in Culinary Arts. After graduation and winning Gold in an apprenticeship black box competition, he was awarded a 3 year apprenticeship at Vancouver Community College, while working at local hotels, country clubs to attain his Red Seal as a Chef. During this time Alex realized his passion as Chef de Partie and pursued working as a banquet chef. This lead into the start of his own catering company, Pugsley’s Creative Catering. During his continuous professional development, in 2004, Alex became a member of the Johnston’s family as a skilled meat cutter and soon followed as the creative director of Johnston’s crowd pleasing recipes. In collaboration with Johnston’s and Pugsley’s Creative Catering, Alex has a role of health and food safety lead hand and also works on marketing projects such as Pork video and photo shoots, whole hog BBQs, research development, and BBQ competitions. Alex’s goal is to one day own a smokehouse restaurant and become a Pitmaster, while still serving the community with his catering company.

Alex is constantly learning as a chef and he feels he is heavily influenced by the West Coast cuisine, a fusion of world cuisines, however featuring the local products that are available in BC, and also asking the question “could this be smoked?” Chef Alex’s style is all about being different; pairing foods that may not normally make sense, such as Grilled Mac & Cheese with Pulled Pork Panini. He loves cooking with the “farm to plate” concept – keeping it as simple, fresh, and delicious as possible with local products grown and raised right here in BC.

Chef Alex is also passionate about breaking down stigma and bringing awareness to the taste advantages of cooking pork properly. Alex states, “Don’t cook pork like your Grandma!” He stresses that pork should be juicy and flavourful, not overcooked and dry. “This,” he says, “is why pork is my favourite staple in cooking. There is just so much that can be done with pork and it’s continually surprising people with its versatility. I just want to ensure it’s cooked properly to get the appreciation it deserves as a succulent and tender entrée it is.”

Chef Thompson currently runs his boutique catering company Wooden Boat Food Company specializing in Vietnamese and French fare in Kitchener, Ontario. His award-winning flagship sauce NUOC CHAM (dipping/dressing sauce, XA (lemongrass marinade), and KHO (Savoury Caramel BBQ / Stewing Marinade) can be found in over 200 retailers in British Columbia, Alberta, and Ontario.

As a former teaching chef instructor Chef Thompson has worked in both the private and public sector of the food industry and has spent many years honing his skills at several prestigious restaurants in Vancouver namely Bishops, Il Giardino, and Westwood Plateau Golf and Country Club. Thompson can be seen providing lively and engaging information-packed cooking demonstrations in BC and Ontario.

Chef Thompson holds a Bachelor of Music degree in classical guitar performance, a Bachelor of Education, a diploma from Pacific Institute of Culinary Arts, and his Level 2 Wine and Spirit Education Trust. In his pursuit of happiness, he also took a two-year hiatus from both cooking and teaching to pursue a musical dream that culminated in a Grammy Award nomination in 2010.

Thompson now lives in the close-knit community of Kitchener, Ontario with his lovely wife, two darling children, and their lovable furball Jetson.
